Fermentation, the initial phase, is where all alcohol originates. This process requires a raw material in liquid form that contains sugar, coupled with the addition of yeast. Yeast, a living organism, consumes the sugar, producing alcohol and carbon dioxide (CO2) as by-products, setting the foundation for the spirit's unique character.
Distillation follows, refining the alcohol by separating it from other components. This process involves heating the liquid mixture, causing it to vaporize. As the vapors rise, they separate based on their boiling points, allowing the desired purity to be achieved.
Distillation transforms agricultural raw materials—such as grapes, other fruits, sugar-cane, molasses, potatoes, and cereals—into the clear, potent spirits we recognize.
In essence, distillation removes the original raw materials to the extent that they are no longer present in the final spirit drink. This was conclusively demonstrated by the European Food Safety Authority (EFSA), which confirmed that allergenic proteins from raw materials are not present in distilled spirits.
